Banana stem is also called as baledindu in kannada. This is a healthy appetizing summer drink, though this is a summer drink it can be served any time of the year. There are numerous health benefits of banana stem and buttermilk.
There are lots of recipes using banana stem. We can prepare salad, juice, south Indian style playa, sambar, sasive, dosa using banana stem. Banana stem juice is not appealing as other fruit or vegetable juices. So mix with other loving veggies, fruits or extra flavours to make it appealing. Here is an effective way to include this healthy veggie. In summer, buttermilk and banana stem both cools the body temperature.
Health benefits of banana stem
Banana stem is well known for high fibre content, vitamins and potassium. Banana stem has good detoxifying effect of the body. It is a very good medicine for flushing out the kidney stones, thereby cleansing the urinary tract.
It is supposed to be a good weight loss diet food. Ginger and asafoetida makes it a good drink for gut, to improve digestion.
How to prepare banana stem buttermilk
Remove the outer thick covering of the banana stem. Take the inner pith, make slices, then finely chop the banana stem and immerse them in water with few drops of curd. This prevents the browning of banana stem and makes it soft.
Finely chop the banana stem to grind it fine otherwise it is difficult to grind. Straining the banana stem- ginger mixture is optional. Sieving removes the extra particles.
If buttermilk is not available, add curd and double the quantity of water and churn well.
Adding flavours
Any mild flavours like cumin powder, mint or coriander leaves, ajwain, garlic can be added to banana stem buttermilk. I have added ginger and asafoetida.

Banana stem buttermilk
Ingredients
- Banana stem chopped fine – ½ cup
- Ginger pieces – ½ tbsp
- Asafoetida or hing – ¼ tsp
- Salt as per taste
- Buttermilk – 2 cups
- Water as required
Instructions
- Take a mixer jar, add banana stem, ginger pieces and little water. Make a very fine paste of this.
- Strain this or use as it is. Add asafoetida and salt. Mix well.
- Now add buttermilk, mix properly, adjust water if required and serve chilled or as it is.
