Fresh turmeric flavored buttermilk or tambuli is a healthy, delicious, healing tambuli recipe using home grown fresh turmeric rhizome.
This is a great way of including fresh turmeric in daily cooking as these are rich in anti-oxidants, anti-inflammatory components.
Fresh turmeric rhizome are available only during winters.
This recipe is glutenfree. This tambuli has a very distinct, strong flavor of fresh turmeric and soothing colour.
Tambuli is part of our everyday meal irrespective of any season. Tambuli is important side dish during any special occasion in our family.
In coastal Karnataka and malnad regions there are two types of tambuli, one served as drink and the other is served with rice. The ones served as drink is mildly spiced and other hand tambuli served with rice are strongly spiced.

Fresh turmeric rhizome or roots are packed with antioxidants, many reports have suggested that they reduce heart related diseases.

How to prepare and serve fresh turmeric flavored buttermilk or tambuli
Fry the fresh turmeric in oil to remove the raw smell and bitterness.
Adding black pepper helps in maximum absorption of turmeric by the body.
This tambuli can be prepared using sour or sweet buttermilk. Adjust jaggery, black pepper as per taste and sourness of buttermilk.
For frying fresh turmeric ghee can also be used instead of oil.
Fresh turmeric flavored buttermilk can be served in both ways either as a side dish or drink.
Stepwise recipe of preparing fresh turmeric flavored buttermilk or tambuli
Heat oil in a pan, fry fresh turmeric slices in oil until they become soft. Next add black pepper and cumin. Fry this for a minute on medium heat. Cool this mixture and grind into fine paste with grated coconut.
Add salt and jaggery as per taste. Mix well. Add buttermilk and mix well.
For seasoning, heat coconut oil, saute mustard seeds and add curry leaves. Add this to turmeric flavored buttermilk and mix well before serving.
Fresh turmeric flavored buttermilk or tambuli is ready to served as drink or with hot rice.
How to make this recipe vegan?
Buttermilk can be easily replaced with cashew milk, almond milk or soya milk. However, use lemon juice to get the sourness as per taste preference.
This makes the recipe vegan and if you want to enjoy this recipe being vegan, then try these methods.
I have personally tried with almond milk as substitute, but have not tried with cashew or soya milk.

Fresh turmeric flavored buttermilk or tambuli
Ingredients
- Fresh turmeric pieces – 1 tbsp
- Black pepper – ¼ tsp
- Cumin or jeera – ¼ tsp
- Coconut oil – ½ tsp
- Coconut gratings – ¼ cup
- Buttermilk – 1 cup
- Jaggery powder – ½ tsp
- Salt as per taste
For seasoning:
- Coconut oil – 1 tsp
- Mustard seeds – ½ tsp
- Curry leaves – 6-8 nos
Instructions
- Heat a pan, add coconut oil. Next add fresh turmeric pieces. Fry well until it gets soft in oil.
- To the same add black pepper and cumin, fry for a minute.
- Cool this mixture, grind turmeric mixture with coconut gratings. Make a fine paste, add jaggery and salt. Mix well.
- Add buttermilk and whisk well.
- Tambuli is ready for seasoning. Heat coconut oil in a pan. Add mustard seeds, curry leaves. Saute well until done. Pour this on the tambuli and serve as a drink or with rice.
