Handvo is a traditional Gujarati savory cake and nutritious with loads of lentils and sprouts. The typical handvo is made of only vegetables but in my recipe have used sprouts to make it healthier. I have baked it in pressure cooker. It is served usually with green chutney and sweet chutney.
Here is the simple recipe to prepare a healthy tea time Handvo baked in pressure cooker.

Serves: 5 Nos
Ingredients:
Fine semolina -1 cup
Rice -1 tbsp
Moong dal-1 tbsp
Channa dal-1 tbsp
Toor dal -1 tbsp
Urd dal -1 tbsp
Half Cooked Sprouts -1/2 cup (green gram, mung beans, cowpeas)
Peanut roasted -2 tbsp
Curd -1 cup
Baking soda -1 tsp
Turmeric powder -1 tsp
Red chilli powder -2 tsp
Hing -1 tsp
Grated ginger -1 tsp
Cinnamon powder -1 tsp
Lemon juice -1/2 tsp
Salt-1 tsp
Grated carrot-1/2 cup
Cabbage grated -1/2 cup
Sugar -1 tbsp
Roasted sesame seeds -1 tbsp
Water if required
For Seasoning :
Coconut Oil-2 tbsp
Mustard seeds – 1 tsp
Curry leaves -10-12 nos
Method:
- Soak rice, channa dal, moong dal, toor dal, urd dal in water for 1 hour. Remove water and make a coarse paste.
- Now mix fine semolina, curd, dal paste, turmeric powder, red chilli powder. Keep aside for 5 mins.
- Now add ginger, salt, sprouts, peanuts, cinnamon powder, sugar, cabbage, carrot, little water if required. Whisk well.
- Now add lemon juice, baking soda. Mix well once. Pour the batter into greased tin and sprinkle roasted sesame seeds.
- Bake in preheated cooker with sand at bottom for 25 mins or in preheated oven at 180°C for 20 mins. After 25 mins, cool and cut into pieces. Do the seasoning with oil, mustard seeds and curry leaves. Serve hot with Pudina chutney and sweet chutney.
My Notes:
Baking soda can be replaced with Eno fruit salt.
Any veggies and sprouts of choice can be used to prepare handvo.
Handvo can be baked in oven or steam cooked in pressure cooker or cooked on non-stick tawa.
