What is guacamole?
Guacamole (Spanish word) is a dip or spread which originated from Mexico. It is an avocado based dip.
It is a staple food of Mexican cuisine. It’s a simple recipe that can be balanced with few simple ingredients.
The right way to make a perfect guacamole is using fully ripe avocados.
A common issue with guacamole is that it turns brown easily. However we can keep it green as much as possible. We can add lemon juice and olive oil to avoid browning.

Avocados are healthy bunch of fruits. Avocado is popularly called butter fruit in India or avocado pear or alligator pear with a single large seed.
They are rich in vitamins, minerals, high in fibre, carotenoids, saturated and monounsaturated fat making them nutrient dense. Since these are rich in fiber, they keep you full for long duration of time.
However, there are some reports suggesting that eating too much might lead to bloating and irritability in the stomach.

Mixing bowl: A large bowl which is used for mashing and mixing the ingredients.
Masher or fork: This helps in mashing the avocado pulp. Either fork or potato masher for this purpose.
Sharp edge spoon: Helps to scoop out the avocado pulp from skin.
Ingredients you need to make guacamole?
Avocado: It is important to choose a perfect avocado to make guacamole. Avocado should not be too firm but also not too soft to touch. I have chosen Indian variety, they are large, spherical shape.
Lemon juice: We add fresh lemon juice to guacamole. Its always preferred to add freshly squeezed lemon juice. If we use stored lemon juice, then it becomes bitter. Adding lemon juice prevents browning of mashed avocado.
Cheese: Freshly grated cheese adds texture to guacamole.
Onion: Finely chopped onion is added. Red onion or white onion can be used.
Tomato: Finely chopped tomatoes are added for tangy crunch to the dip
Olive oil: Add a bit of olive oil, makes it more flavourful and tastier
Herbs: Any herbs of choice can be used. I have used dried herbs in this recipe
Salt and black pepper powder is added as per taste preference. These two highlight the flavors and too little will make guacamole fall flat.
How to make guacamole recipe (stepwise photos)
Selection of avocado:
Select a perfect avocado / butter fruit which is soft to touch and ripe. Do not use unripe avocado or spoilt ones.
Scooping out of avocado or butter fruit:
It is perfectly easy to chop avocado or butter fruit. Start by passing the fruit with a sharp knife until it reaches the inner seed.
Simply twist the fruit and open the fruit. Using a metal spoon scoop out the avocado flesh in a large mixing bowl.
Mash the pulp using a potato masher or fork. Do not use a mixer jar or grind the pulp, it becomes completely chutney like.
Mash until its creamy or chunky as per your preference. If you like it to be chunkier just mash it little and leave it as it is.
Add other ingredients one after another. Add lemon juice at first and this prevents browning of guacamole soon.
Cheese, finely chopped onion, tomatoes, olive oil are added. Also add dried herbs, black pepper powder and salt.
Mix every ingredient well until combined and serve immediately as a side dish with your favorite nachos or papad.

Guacamole tastes best when served at room temperature. It can be served in burrito bowl and wraps also.

Storage suggestions
We have to always store the leftover guacamole close otherwise they turn brown and begins to spoil.
Cover guacamole with plastic wrap, cover it in such a way that it will touch the surface entire top layer of dip. Refrigerate this until use.
It can be refrigerated for upto 2 days.
However to slow limit the browning of guacamole, simple add some fresh lemon juice on top of guacamole and refrigerate it.
If you have to store some leftover guacamole, simply cover the rest with plastic wrap, refrigerate immediately.
Air makes it brown due to oxidation so covering it before storing is important.
Recipe variations
Guacamole is traditional Mexican food, however, feel free to experiment with flavors as per taste preferences.
In traditional method we add jalapeno or green chilies and fresh cilantro. However, you can add some dried herbs as well.
If you want some more creaminess, then can add fresh cream to it.
We can add few chopped mint leaves making it taste fresher.
To make it more creamy, add a one or two spoons of mayonnaise
Optional additions: Crushed garlic, cumin and cayenne pepper, topped with some pomegranate.
Tips to make perfect guacamole
Never use a cut open avocado, always use fresh whole ones. Cut open avocado tend to brown due to oxidation.
The secret to a perfect guacamole is to have all the ingredients in right proportions, so that we get good flavours of choice.
Always taste and check the seasoning before serving. It can be seasoned with extra salt and lemon juice if required.
Feel free to experiment with the ingredients by keeping avocado and salt as base. Guacamole can be made smooth or chunky depending on individual taste.
