Fresh Turmeric Coconut Rice

Fresh turmeric coconut rice is aromatic bright in colour one pot meal rice dish. A dairy free vegetarian glutenfree meal prep. It is easy and quick rice recipe that can be relished by family and friends.

Ingredients

  • Coconut oil -2 tbsp
  • Cumin or jeera – 1 ½ tsp
  • Cashew nuts – 2 tbsp
  • Onion (chopped) – ½ cup
  • Garlic pods (chopped) – 1 tbsp
  • Fresh turmeric root (deskinned and grated) – ½ tbsp
  • Fresh green peas – ½ cup
  • Black pepper powder – 1 tbsp
  • Basmati rice (soaked in water for 30 minutes) – 1 ½ cup
  • Coconut milk – 1 cup
  • Salt as per taste
  • Water – 2 ½ cups

Instructions

  • Heat a thick bottomed wok. Add coconut oil, add cumin seeds. Fry well.
  • Add cashew nuts, fry well until they are golden.
  • Next step we will add finely chopped onion and garlic. Fry well.
  • Next important step is to add grated fresh turmeric root. In this step, we must fry well, the root becomes soft and leaves a pleasant yellow hue.
  • Add fresh green peas and mix it well. Add the black pepper powder to spice the rice. Mix well the spices and add the soaked basmati rice to this.
  • Mix everything well and add thick coconut milk, salt.
  • Add water as per the quantity of rice taken, close and cook the rice until fluffy on medium heat. Give a quick stir at intervals and close with a lid. Add finely chopped coriander leaves at the end.
  • Fluff the rice with a fork and serve hot healthy yellow rice.

Notes

It took 20 minutes for the rice to completely cook on medium heat. Cooking the rice depends on the heat and water you have added. So adjust as needed.
Adjust salt and black pepper powder as per taste preference.
