Preheat the oven at 180°C for 15 mins. Prepare the baking tray with parchment paper.
Preparation of masala:
Make a fine or coarse powder of dry coconut grating, curry leaves, roasted peanuts, roasted Bengal gram, cumin. Keep this powder for further use.
Preparation of dough:
Take a mixing bowl, add whole wheat flour, rice flour, jowar flour, jackfruit seed powder, nut powder, salt as per taste, baking soda and sesame seeds. Also add red chili powder and asafoetida.
Mix very well so that all ingredients blend well. Add hot oil and mix well with the fingertips. The texture of the flour mixture should be of breadcrumb texture.
Add one spoon of water at a time to this mixture and prepare the stiff pliable dough.
Rest the dough for 15 minutes. This helps the dough to meld well.
Take small balls of dough between two parchment papers. Roll the dough into thin sheets and using cookie cutter make the marks for crackers and pierce with a fork so that the crackers do not puff up too much during baking.
Place the crackers on baking tray and bake these crackers at 180°C for 15 to 20 minutes based on individual oven settings.
After baking, cool these crackers on wire rack and store them airtight container.
