Jackseed Veggie Salad

This is just three easy steps salad with jackseed at every bite. March to May is jackfruit season and lots of jackfruit seeds go waste, I just thought of using these underutilized seeds for a healthy tasty dish. They are highly rich in protein, vitamin A, vitamin C content with few antioxidants and loaded with carbohydrates, dietary fiber. It’s very simple to prepare and any vegetable of choice can be used. I have used Ranch dressing without mayonnaise. It forms a one bowl meal can be served either chilled or as it is.

Cooking Time: 30 mins

Serves: 4 Nos


Jackseed dried and cooked-1/4 cup

Chopped Veggies- 3/4 cup (cabbage, tomato, onion and sweet corn)

For ranch salad dressing (this is my version)

Buttermilk- 1/4 cup

Cream-2 tbsp

Basil leaves-3-5 nos

Black pepper-1 tsp

Dill leaves- 1 tsp

Salt as per taste

Tahini paste-1/2 tsp

Olive oil/ coconut oil- 1 tbsp

Lemon juice-1/2 tsp

Crushed garlic-1 tsp


  1. Prepare the salad dressing by mixing all the ingredients under ranch salad dressing.
  2. Take a big bowl, add all the veggies with chopped and cooked jackseed, now add the ranch salad dressing to this and mix well.
  3. Refrigerate for half an hour and serve chilled.

My Notes:

Any veggie like cucumber, carrot can be used in this salad.

Typical ranch salad dressing is prepared with mayonnaise. Any kind of salad dressing can be used. I have used coconut oil to give a typical Karnataka touch to the salad.

Refrigeration is completely optional.
