Roasted Eggplant  Mango Curry Recipe

Roast eggplant / gulla badanekayi on open flame

Cool and peel the charred skin

Add it to mango pulp

Mash and add  birds eye chilies

Add finely chopped onion and  tamarind water

Add jaggery and salt as per taste

Mash well and the curry is ready for seasoning

Seasoning with coconut oil, mustard seeds, cumin, curry leaves, red chili, asafoetida
