Ginger Flavored Chocolate Cookies

New Year holiday celebrations with just finished X-mas and so many cookies, cake recipes circulating on social media. I wanted to bake something healthy for my kids to munch during teatime or pack it for their holiday travels. Just because Christmas is over it doesn’t mean we cannot relish these ginger flavored cookies which are generally spiced up with cinnamon, black pepper, clove, ginger. These cookies are made healthy by replacing refined flour with whole wheat flour, refined sugar with cane sugar. I have used coconut oil which also gives a nice flavor to the cookies. They taste divine by adding melted dark chocolate. These tasty festive holiday cookies can be enjoyed with milk or a cup of coffee.

Ingredients:

Whole wheat flour-1 cup

Coconut oil- ¼  cup +1 tbsp

Dark chocolate grated- ½ cup

Powdered cane sugar- ½ cup

Ginger powder-1 tsp

Cinnamon powder- ¼ tsp

Salt a pinch

Milk-1 tbsp to prepare dough

Method:

  1. Take a bowl add grated chocolate, oil and melt on double boiler. As the chocolate is half melt, take out from double boiler and mix vigorously until it melts completely.
  2. Take a bowl, add melted chocolate, powdered cane sugar and whisk well using an electric blender until it’s creamy.
  3. Now add the flour, ginger powder, cinnamon powder, salt mix well to form a dough using milk
  4. Wrap this with cling film and refrigerate for half an hour.
  5. Take small portions of dough, press hard with palm and prepare cookies of desired shape. Preheat the oven at 170℃ for 10 minutes.
  6. Place the prepared cookies on parchment paper lined baking tray. Bake in preheated oven at 160℃ for 15 minutes.
  7. Take out from oven after 15 minutes, cool on wire rack and later store in airtight container.

My Notes:

Temperature and time depends on individual oven settings.

Grated chocolate helps in easily melting them. Chocolate chunks can also be used.

Coconut oil can be replaced with any refined oil.

Butter can also be used instead of oil.

The dough crumbles, so just press together to prepare the cookies. Little extra milk can be added during dough preparation to bring the mixture together.

If ginger powder is not available, finely grated ginger can be used. A mix of pepper, nutmeg can also be used to spice up the cookies.
